  <title>the mystery of the day....</title>

  <description>So today I decided to do a last minute search on Stub Hub for Red Sox/Yankees tickets for Wednesday at Yankee Stadium.  &lt;br /&gt;&lt;br /&gt;I find 2 tickets for $42 a piece in a section called:  Tier 16 MVP Reserved, Row U.  Ok, sounds good.  So I buy them.&lt;br /&gt;&lt;br /&gt;I hit the &quot;complete purchase&quot; button, and I see that my completed order says &quot;General Admission&quot;.&lt;br /&gt;&lt;br /&gt;Uhhh general admission?  Is that standing room?  Do they HAVE standing room at Yankee Stadium?&lt;br /&gt;&lt;br /&gt;Sooo some additional research tells me two things:&lt;br /&gt;&lt;br /&gt;1.  There are rows V, W, and X -- would they really put standing room in front of those rows?&lt;br /&gt;2.  Stub Hub doesn&apos;t give you the seat numbers until you pick up the tickets&lt;br /&gt;&lt;br /&gt;The bottom line is, I have no idea what we&apos;re in for on Wednesday.  &lt;br /&gt;&lt;br /&gt;Anybody really familiar with Yankee Stadium?  Do all stub hub tickets say &quot;General Admission&quot; instead of seat #&apos;s, until you pick up the tickets?  &lt;br /&gt;&lt;br /&gt;Obv. I am not too thrilled with the idea of standing for the entire game....&lt;br /&gt;&lt;br /&gt;Drop knowledge if you have it...</description>

  <title>Recipe Wednesday: A Recipe and a Secret</title>

  <description>Let&apos;s start with the secret -- &lt;br /&gt;&lt;br /&gt;I only cook healthy foods.  As nutty as that sounds, I&apos;m serious.  Everything I serve myself and Jared is made out of delicious ingredients like egg whites, fiber one cereal (I grind it up and season it to replace breadcrumb and make pie crusts), and whole grains.   &lt;br /&gt;&lt;br /&gt;A joke that my family really enjoys is going, &quot;Hey Jared, what did Katie make for dinner this week?&quot; they wait for him to say &quot;Enchiladas with Soy Cheese, in a soy wrap, with fat free refried beans and no sour cream&quot;...and then everyone goes &quot;Poooooooor Jared&quot;.  Terrible.  But I think my food comes out pretty good -- and we are pretty healthy (although I think Jared totally binges out whenever I&apos;m not around).&lt;br /&gt;&lt;br /&gt;Now, I had to mention all of this as a set up for my recipe.  RED VELVET CUPCAKES (red velvet is the best thing to ever happen to cakes)!!!!!  AND they only have 130 calories.  I made them this weekend they were so dope.  Better than normal cupcakes.  And guys, you can even eat TWO for less calories than one cupcake normally has -- so bake em&apos; up and rock out:&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;For Frosting&lt;br /&gt;6 tbsp. Jet-Puffed Marshmallow Creme&lt;br /&gt;6 tbsp. Cool Whip Free, thawed&lt;br /&gt;1/4 cup fat-free cream cheese, softened&lt;br /&gt;1 tbsp. Splenda No Calorie Sweetener (granulated)&lt;br /&gt;&lt;br /&gt;For Cupcakes&lt;br /&gt;1 cup Pillsbury Moist Supreme Reduced Sugar Cake Mix, Devil&apos;s Food**&lt;br /&gt;1 cup Pillsbury Moist Supreme Reduced Sugar Cake Mix, Classic Yellow**&lt;br /&gt;Two 25-calorie diet hot cocoa mix packets&lt;br /&gt;1/2 cup fat-free liquid egg substitute (like Egg Beaters)&lt;br /&gt;1/4 cup mini semi-sweet chocolate chips, divided&lt;br /&gt;1/2 oz. red food coloring&lt;br /&gt;1 tsp. Splenda No Calorie Sweetener (granulated)&lt;br /&gt;1/8 tsp. salt&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;Place half of your chocolate chips (2 tbsp.) and the contents of both cocoa packets in a tall glass. Add 12 ounces of boiling water, and stir until chips and cocoa mix have dissolved. Place glass in the freezer until mixture is cold (about 30 minutes). Meanwhile, preheat oven to 350 degrees. In a bowl, mix together marshmallow creme, cream cheese, and 1 tbsp. Splenda until smooth. Fold in Cool Whip. Place bowl in the fridge to chill until cupcakes are ready to be frosted. Once the cocoa in the freezer has chilled, give it a stir, and pour it into a large mixing bowl. Add the cake mixes, egg substitute, remaining chocolate chips, red food coloring, 1 tsp. Splenda, and salt. Using a whisk or fork, mix batter for about 2 minutes (until smooth and blended). Batter will be thin, but don&apos;t worry, your cupcakes will puff up once baked! Line a 12-cup muffin pan with baking cups, and spray lightly with nonstick spray (or simply spray the pan with nonstick spray). Evenly spoon batter into the pan. Place pan in the oven, and bake for 15 - 20 minutes. Cupcakes will look shiny when done. Once cupcakes have cooled completely, evenly spread the frosting over them. Enjoy! MAKES 12 SERVINGS</description>

  <title>Recipe Wednesday: The BEST Stuffed Mushrooms Ever...</title>

  <description>Ok, so to kick off the first Recipe Wednesday (yay!)-- here is a recipe for the best stuffed mushrooms of all time.  I can&apos;t take credit for them, they are Giada DeLaurentis recipe.  I made them for the first time to bring to Easter last year, and now every time I go anywhere with my family, they are requested.  I think it&apos;s the mint that makes them so good.  &lt;br /&gt;&lt;br /&gt;Enjoy!&lt;br /&gt;&lt;br /&gt;1/2 cup Italian-style dried bread crumbs&lt;br /&gt;1/2 cup grated Pecorino Romano&lt;br /&gt;2 garlic cloves, peeled and minced&lt;br /&gt;2 tablespoons chopped fresh Italian parsley leaves&lt;br /&gt;1 tablespoon chopped fresh mint leaves&lt;br /&gt;Salt and freshly ground black pepper&lt;br /&gt;1/3 cup extra-virgin olive oil&lt;br /&gt;28 large (2 1/2-inch-diameter) white mushrooms, stemmed&lt;br /&gt;&lt;br /&gt;Preheat the oven to 400 degrees F.&lt;br /&gt;&lt;br /&gt;Stir the bread crumbs, Pecorino Romano, garlic, parsley, mint, salt and pepper, to taste, and 2 tablespoons olive oil in a medium bowl to blend.&lt;br /&gt;&lt;br /&gt;Drizzle a heavy large baking sheet with about 1 tablespoon olive oil, to coat. Spoon the filling into the mushroom cavities and arrange on the baking sheet, cavity side up. Drizzle remaining oil over the filling in each mushroom. Bake until the mushrooms are tender and the filling is heated through and golden on top, about 25 minutes. Serve.</description>

  <title>Weekend recap....</title>

  <description>So this weekend was jam packed full of action.  I&apos;m too lazy to type it out -- so as usual, list format with snide commentary:&lt;br /&gt;&lt;br /&gt;Friday - pretty whack day, I watched both High School Musicals on the Disney Channel (is it me, or is Zac Efron totally gay?)and then picked up Jared from the airport.  It was as riveting as it sounds.&lt;br /&gt;&lt;br /&gt;Saturday - One of my Marist roomates, Lauren, called early in the day to tell me that she and her boyfriend Jason got engaged on Friday night(you guys may have met them at alumni weekend this year).  VERY  exciting.  So we had them over for drinks and then took them out for dinner to celebrate.  On the way to dinner Lauren asked me to be her maid of honor.  VERY VERY exciting.  They are a great couple, I couldn&apos;t be happier for them.  And of course congrats again to Heather and Marcus.&lt;br /&gt;&lt;br /&gt;Sunday - Did absolutely nothing.  Literally -- jack shit.  From dawn to dusk.  It felt so right.&lt;br /&gt;&lt;br /&gt;Monday - New Years Eve.  We went to Slate Lounge in NYC with some of my girl friends from Marist (and their respective boyfriends/fiancees/husbands), my sister and her friend, Mikey Naps, and Pagano.  5 hour open bar and food.  Very very good times.  The boys played pool while the girls danced.  My kinda night.&lt;br /&gt;&lt;br /&gt;Tuesday - Recovery.  We ordered breakfast from the diner and played video games with my sister and her friend all day.  At around 8pm, we drove into Brooklyn to Christina&apos;s where Mikey cooked us an AWESOME dinner with 2 kinds of bruschetta for appetizer, and pot roast and potatoes as the main course.  He also made really delicious bread pudding that we had with vanilla ice cream for dessert.  Christina was, as always, a fabulous hostess.&lt;br /&gt;&lt;br /&gt;So today it was back to work -- but all in all the last few days have been a great success.&lt;br /&gt;&lt;br /&gt;Oh, and just so no one feels left out of the loop in my life, I&apos;ll give the official livejournal word -- Jared and I are moving in together on Feb 1. &lt;br /&gt;&lt;br /&gt;Happy New Year bitches!</description>

  <description>Soo continuing with the Ksafs&apos;s Fall Concert Tour, tomorrow night we are going to see Genesis at Giant&apos;s Stadium.&lt;br /&gt;&lt;br /&gt;Can you feel my excitement through the computer?  Seriously, put your hand against the computer screen and you will literally be electrocuted by my excitement levels.&lt;br /&gt;&lt;br /&gt;I LOVE PHIL COLLINS!  I swear to god, his reuniting with Genesis is like, the best thing of all time.  I&apos;m hoping to buy myself a Genesis hoodie, because that&apos;s the kind of thing I need to have.&lt;br /&gt;&lt;br /&gt;Annnnd even better, &quot;In Too Deep&quot; is on the set list...as you already know, that song is like #3 in my top favorite songs of all time.&lt;br /&gt;&lt;br /&gt;And also to add to my list of things I am looking forward to....Alumni Weekend next weekend.  I&apos;m psyched, it&apos;s gonna be a good time.   <description>I really like free things.  I really really do.  Pagano shares this intense love with me.  The two of us go to free movies, eat free food, and sample free wine more than we should.  If we see an event that&apos;s givin&apos; shit up for free...count us in.&lt;br /&gt;&lt;br /&gt;This summer we&apos;ve hit rock bottom.  It all started when Pagano got free tickets to see Gym Class Heroes and Hinder.  &lt;br /&gt;&lt;br /&gt;Gym Class Heroes? - not bad, I like my hipster&apos;d version of hip hop....&lt;br /&gt;&lt;br /&gt;Hinder? - god awful, GOD AWFUL! the worst crap I&apos;ve ever heard.  Seriously.  And the singer looks like a wet cat.  Have you ever seen a soaking wet cat?  Not so cute.&lt;br /&gt;&lt;br /&gt;The clincher?  It was at Webster Hall...&lt;br /&gt;&lt;br /&gt;If you&apos;ve never been to Webster Hall let me describe it for you.  If I die and get damned to the eternal pits of hell, the fiery inferno will directly resemble Webster Hall.  It&apos;s hot, it&apos;s filthy, it smells...it straight up sucks.&lt;br /&gt;&lt;br /&gt;So recap of the Hinder/Gym Class concert? We got drunk (on Bud Select, the proud concert sponsor) -- and I screamed the lyrics to &quot;Lips of An Angel&quot; at the very front of the stage like a groupie.
